The foundation of our beer is the naturally filtered limestone aquifer water of the Cayman Islands. Its unique mineral profile provides the perfect canvas for building our distinct island-inspired flavors.

FROM GRAIN TO GLASS: OURPROCESS
Brewery
01 MILLING & MASHING
It all begins here. We crush premium malted barley to expose the starches, then steep the grains in hot water. This creates a sweet, sugary liquid called ‘wort’—the very soul of our beer.
02 BOILING & HOPPING
The wort is transferred to our kettle where it’s boiled to sterilize it. During the boil, we add carefully selected hops at different stages to provide the bitterness, flavor, and iconic aroma of our beers.
03 FERMENTATION
After cooling, the wort moves to our fermentation tanks where the real magic happens. We pitch our house yeast, which diligently works to convert the sugars into alcohol and CO₂, creating the complex flavors and character of the final beer.
04 CANNING & KEGGING
Once fermentation is complete, the beer is conditioned and carbonated before being packaged fresh. Whether in our iconic cans or a keg for the taproom, it’s ready to be enjoyed at its peak flavor, straight from the source.
